FIND A FUN CONTAINER

GOOFY WALDORF SALAD

 

1 cup grated carrot
1 cup chopped celery
1 cup chopped apple
1/2 cup chopped walnuts
1/2 cup raisins
2 to 3 tbsp. mayonnaise
1 tsp. lemon juice
4 ice cream cones

 

In a large mixing bowl, stir all ingredients well. Scoop into ice cream cones. Serves 4.

 

PARTY PARFAIT

 

2 cups plain or vanilla yogurt
1/2 cup fresh fruit
1/4 cup whole grain cereal

 

Fill two parfait glasses halfway with yogurt. Add a layer of fruit and cereal. Spoon in the remaining yogurt and add another layer of fruit and cereal. Refrigerate until serving time. For frozen parfaits, freeze the yogurt and fruit before you assemble the sundae. Serves 2.

SUPER SALAD PITAS

One of the tastiest ways to give your children their favorite vegetables is in a pocket bread.

All you will need to add for a super salad pita is some feta or cottage cheese and a tablespoon of dressing. For a less drippy sandwich, try tossing the vegetables with the dressing before putting them in the pocket.

 

1 cup sunflower or peanut oil
1 clove garlic, crushed
1/2 cup fresh parsley, chopped
2 teaspoons dried dill weed
1 teaspoon dried chives or 1 tablespoon fresh, chopped
1/4 teaspoon ground black pepper
1/4 teaspoon salt
1/3 cup cider vinegar

 

Mix 1/4 cup of the oil in a blender or food processor with all of the ingredients except the vinegar. Add the vinegar and another 1/4 cup of the oil and process for a few seconds.

With the blender or processor running, slowly pour in the remaining oil until it is incorporated completely and the dressing is creamy. Store in a covered jar in the refrigerator.
