Yogurt Dipping Sauce
1 medium
cucumber, peeled, halved lengthwise, seeded, and cut into 1-inch pieces
1/4 cup fresh parsley leaves, chopped
1 medium scallion, sliced thin
1/4 cup plain yogurt, or cottage cheese
2 tbsp. fresh lemon juice
1 tbsp. white wine or cider vinegar
1 clove garlic, crushed
Pepper to taste
Process
ingredients in a blender or processor until creamy and smooth. Store in the
refrigerator.
Great with
veggie sticks, pretzels, etc.
