Recipes for Indian Festivals: Diwali

 

Badam Doodh

 

Ingredients:

  • 2 cups milk
  • 10 Almonds
  • Few strands of saffron
  • 2 tsp sugar (more as per you taste)

Steps:

  1. Blanch the almonds, peel and cut into thin slices, lengthwise

  2. Soak saffron in 1tbsp warm milk for 10-15 minutes.

  3. Bring milk to boil.

  4. Add soaked saffron, sugar and almonds.

  5. Let it simmer on slow flame for a minute.

  6. Stir well.

  7. Pour into cup, from a height.

  8. This way a lot of froth will form on the milk.

  9. Serve piping hot.

Apple Shake

 

Ingredients:

  • 1 apple, peeled, deseeded and chopped

  • 2 glass milk

  • 4 tbsp sugar

Steps:

  1. Run apple, milk and sugar in blender, till apple is crushed completely.
  2. Chill the Shake.
  3. Pour into glass, from a height; so froth forms.
  4. Serve cold.

Sitaphal Rabdi

 

Ingredients:

  • 1 cup Sitaphal (custard apple) pulp

  • 2 liters whole milk

  • 3/4 cup sugar

  • 4 almonds

  • 4 green pistachios, unsalted

  • 1/4 tsp. saffron strands

  • 1/4 tsp. cardamom powder

  • 1 tsp. chopped fragrant red rose petals

Steps:

  1. Crush almonds and pasta coarsely, or cut into thin slivers.
  2. Boil milk in a clean heavy pan.
  3. Simmer for ten minutes, after it starts boiling.
  4. Stir occasionally while boiling.
  5. Add sugar, stir till dissolved.
  6. Take off fire, add saffron, cardamom, almonds, pastas.
  7. Cool to room temperature.
  8. Add sitaphal pulp, chill for 3-4 hours till very cold.
  9. Put in individual serving bowls sprinkle very few chopped petals to garnish.
  10. Serve chilled.

Coffee Fizz

 

Ingredients:

  • 1 1/2 cup milk

  • 4 tbsp. filter coffee decoction or 2 tsp. instant coffee

  • 3 tsp. sugar ground

  • 4 tsp. hot water (if using instant coffee)

  • 2 scoops vanilla ice-cream

  • 1/4 tsp vanilla essence

Steps:

  1. Beat together sugar, coffee and hot water.
  2. When it gets foamy, add milk.
  3. Mix and keep in refrigerator till required and quite chilled.
  4. Before serving, add vanilla essence,  beat till frothy with an electric whopper or egg beater.
  5. Pour coffee in two glasses from
  6. Put vanilla ice-cream in to glass (one in each)
  7. Serve cold

Creamy Hot Chocolate

 

Ingredients:

For Cream

  • 1/2 cup chilled heavy cream

  • 1 1/2 tbsp sugar

Other Ingredients

  • 2 cups milk

  • 1 tbsp milk

  • 1 tbsp unsweetened chocolate

  • 1/4 tsp powdered unsweetened chocolate

Steps:

  1. Beat cream and sugar till it holds stiff peaks
  2. Heat milk, remove 1/4 cup of milk in a cup
  3. Add sugar and chocolate, stir vigorously
  4. When fully dissolved and frothy, add to remaining milk.
  5. Bring back to a boil, reduce, simmer 1/2 a minute
  6. Pour into 2 large mugs from a height to make it frothy.
  7. Top with whipped cream
  8. Sprinkle powdered chocolate
  9. Serve hot
