  Instant Mango Pickle

Ingredients:

Green mango grated –1 cup (sour)
Red chilli powder –1/3  cup
Fresh salt -1/4 cup
Turmeric -1˝tsp
Sesame oil -˝cup
Musterd seeds -1tsp
Asafoetida - 1tsp
Methi seeds -1 tsp

Method:

  1. Wash and clean the mangoes.

  2. Peel them  and grate them ,measure for one cup.

  3. Heat oil, add mustaerd seeds; after they splutteradd methi seeds. Fry for a few seconds, add hing and turmeric.

  4. Add grated mango  and fry for a minute untill the moisture is gone.

  5. Remove from the heat and add chilli powder and salt.

  6. Stir  thoroughly and allow to cool.

  7. Transfer  it to a ceramic jar and keep air tight lid.

  8. It can be used for 2 to 3 weeks.
