Chana spinach

Ingredients

1 cup kabuli chana soaked overnight (chick peas)

¼ tsp soda bicarb (baking soda)

2 black cardamom

1 bunch spinach

1 onion, finely chopped

4-5 flakes garlic

¼ tsp, chopped ginger

2 pureed tomatoes

2 tsp chili powder

1 tsp garam masala powder

1 tsp chana masala powder

1 bay leaf

¼ tsp sugar

2 tbsp oil

Method

  1. Blanch spinach and grind to a fine paste with onions, garlic, ginger.

  2. Cook Chick peas with salt , soda bicarb and cardamom. Keep on low flame for 10 minutes.

  3. Heat oil, add bay leaf, add the pureed tomatoes, cook on low flame till thick.

  4. Add salt, chili powder, chana masala powder, sugar and fry well on low flame.

  5.  Strain the chick peas and add to the mixture. Fry well, add the strained water, cook till it dries.

  6. Add the spinach, cook for 2 minutes. Sprinkle garam masala powder.

  7. Garnish with grated ginger and tomato slices.
