  Tomato and Paneer Soup

Ingredients

Tomatoes - 3  medium
Oil - 2  tsp
Spring Onions, Chopped - 2  stalks
Garlic - 4  cloves
Ginger - 1  inch
Tomato Ketchup - 4  tbsp
Vegetable Stock Or Water - 4  cups
Salt to taste
White Pepper Powder - to taste
Corn Starch - 3  tbsp
Cottage Cheese (paneer), Small Cubes - 2  tbsp
Egg Whites - 2
White Vinegar - 2  tsp

Method

  1. Heat oil, add chopped spring onion bulbs and sauté on high heat. Add ginger and garlic and sauté for some time.
  2. Add chopped tomatoes, tomato ketchup and vegetable stock and let the mixture boil.
  3. Season with salt and white pepper powder.
  4. Mix corn flour in a little water and make a smooth paste.
  5. Add paneer cubes and the corn flour paste to the boiling soup to thicken.
  6. Add egg whites and the chopped stem of the spring onion and mix.
  7. Lastly add white vinegar, mix and serve hot.
