  Tortilla Soup
A tasty tomato based soup which is topped with corn chips, sour cream and cheese.

Ingredients
1 kg. ripe tomatoes, chopped
3 teaspoons corn flour
2 teacups corn chips
100 grams cottage cheese (paneer), chopped
2 tablespoons cooked corn kernels
1 onion, chopped
1/2 seasoning cube, vegetarian
1/2 teaspoon sugar
2 tablespoons butter
Salt to taste

For the garnish:
Fresh cream
Grated cheese

Method

  1. Add 5 cups of water to the tomatoes and cook. Blend in a blender and pass through a sieve.

  2. Heat the butter and fry the onion for 1/2 minute.

  3. Mix the corn flour in 1 cup of water.

  4. Add the tomato mixture and corn flour mixture to the onion and bring to a boil.

  5. Add the cottage cheese, corn, seasoning cube, sugar and salt and cook for a few minutes.

  6. Just before serving, add the corn chips and top with cream and grated cheese.

  7. Serve hot.
